Dandelion Taraxacum Officinale, is a flowering herbaceous perennial plant of the Asteraceae family. The common dandelion is well known for its yellow flower heads that turn into round balls of many silver-tufted fruits that disperse in the wind.
Most people think of dandelion as an annoying weed they should immediately remove from their lawn or garden, but the plant has long been used in herbal medicine to help with digestion and stimulate the appetite, the polysaccharides in dandelion are known to reduce stress on the liver and support its ability to produce bile, they also help your liver filter potentially harmful chemicals out of your food. Dandelion is also a good source of Vitamin C. You can safely eat the entire dandelion plant from root to blossom but in small quantities. Do not use dandelion if you are taking a blood thinner, such as warfarin. You should avoid dandelion if you have gallbladder problems, have diabetes or are taking medicine to control blood sugar levels and if you are taking a diuretic.
Dandelions also play a crucial role in the health of bees and butterfly larvae. The flowers are an important food source for pollinators, they provide both pollen and nectar.
