Maple is a little subtler than cousin oak and it's a good choice for smoking. Burns hot and slow. Maple, like fruit wood gives a sweet and light mildly smoky flavour.
GOOD FOR: poultry, fish, ham, game birds, Cheeses, fruits (It's best to Balance Maple with Oak)
