Brooding, multi-layered nose of dark cherry, bittersweet chocolate, pepper and spicy mocha, seasoned by light vanilla. A hefty, muscular palate with grippy tannins, luscious black fruits and a long, sweet-spice finish. Superb depth and concentration.
Serve lightly chilled with a charred ribeye steak, smokey bacon burger or tacos.
This is a single-vineyard wine from Kanu's cooler sites. The 'bleeding' technique of saignée was employed to remove a portion of the must, leaving super-concentrated juice behind. Post fermentation, the Shiraz was aged for 16 months in 75% French and 25% American oak, mostly first-fill. As with Côte Rôtie in France's Rhône Valley, a small percentage (5%) of white grape Viognier is used in the blend, to add aromatic lift and a plump mouthfeel.
