- Vitamins: Alfalfa is an excellent source of vitamin K and vitamin C. It also contains vitamins A, B6, and E in smaller amounts.

- Minerals: It is rich in minerals such as calcium, magnesium, potassium, phosphorus, and iron.

- Protein: Alfalfa sprouts and microgreens are a good source of plant-based protein.

- Antioxidants: Alfalfa contains antioxidants, including flavonoids and phenolic compounds.

**Health Benefits of Alfalfa:**

Consuming alfalfa sprouts or microgreens can provide several health benefits, including:

- Digestive Health: The fiber content of alfalfa supports healthy digestion and may help prevent constipation.

- Heart Health: The presence of antioxidants and flavonoids in alfalfa may contribute to cardiovascular health.

- Bone Health: Alfalfa is a good source of calcium and vitamin K, which are essential for maintaining strong bones.

- Immune Support: The vitamin C content of alfalfa supports immune function and helps protect against infections.

- Detoxification: Alfalfa contains chlorophyll, which is known for its detoxifying properties.

**Alfalfa Sprouting:**

- Germination Length: Alfalfa seeds typically germinate within 4 to 6 days.

- Optimal Temperature: The ideal temperature for sprouting alfalfa seeds is between 65F (18C) and 75F (24C).

Instructions for growing alfalfa sprouts:

  1. Rinse the alfalfa seeds thoroughly under running water.
  2. Place the seeds in a sprouting jar or a wide-mouthed jar covered with a mesh or cheesecloth. Add enough water to cover the seeds.
  3. Soak the seeds in water for about 4-6 hours.
  4. After soaking, drain the water from the jar and rinse the seeds again.
  5. Tilt the jar upside down at an angle to allow excess water to drain out while still allowing airflow.
  6. Rinse the seeds twice a day, making sure to drain out all excess water.
  7. Keep the sprouting jar in a cool, well-ventilated area away from direct sunlight.
  8. Continue rinsing and draining the seeds twice a day until they have sprouted and reached the desired length (usually around 1-2 inches).
  9. Once the sprouts have grown, rinse them one final time before consuming. Store them in the refrigerator and consume within a few days for the best quality.

**Alfalfa Microgreens:**

- Germination Length: Alfalfa microgreens typically germinate within 3 to 5 days.

- Optimal Temperature: The ideal temperature for growing alfalfa microgreens is between 70F (21C) and 75F (24C).

Instructions for growing alfalfa microgreens:

  1. Fill a shallow tray or container with a well-draining growing medium, such as potting soil or coco coir.
  2. Moisten the growing medium with water, ensuring it is evenly moist but not overly saturated.
  3. Sprinkle the alfalfa seeds evenly over the surface of the growing medium. Press them gently into the soil without burying them too deep.
  4. Place the tray in a warm and well-lit area, away from direct sunlight initially.
  5. Cover the tray with a lid or plastic wrap to create a humid environment for the seeds to germinate.
  6. After 2-3 days, once the seeds have sprouted, remove the cover and move the tray to a well-lit area or provide artificial light using grow lights.
  7. Water the microgreens regularly, keeping the growing medium moist but not waterlogged.
  8. After 10-14 days, when the microgreens have reached a height of 2-3 inches and developed their first set of true leaves, they are ready to be harvested.
  9. Use a pair of clean scissors to cut the microgreens just above the soil line. Rinse them gently before consuming or storing in the refrigerator.

Ensure to maintain cleanliness and hygiene during the growing process, including using clean equipment, washing hands before handling seeds and sprouts, and regularly sanitizing the growing trays.
