The onion genus Allium, placed in the Amaryllidaceae family, comprises monocotyledonous flowering plants and includes, besides the onion, garlic, chives, scallion, and the leek. Allium species are herbaceous perennials with flowers produced on scapes. They grow from solitary or clustered tunicate bulbs and many have an onion odor and taste. Plants are perennialized by bulbs that reform annually from the base of the old bulb, or are produced on the ends of rhizomes or, in a few species, at the ends of stolons. A small number of species have tuberous roots.

The bulbs' outer coats are commonly brown or grey, with a smooth texture, and are fibrous, or with cellular reticulation. The inner coats of the bulbs are membranous.

Allium victorialis commonly known as Victory Onion, Alpine Leek, or Caucas is a broad-leaved species of wild onion. It is a perennial of the Amaryllis family that occurs widely in mountainous or northerly regions across Europe and Asia. It attains a height of 30cm to 45cm and forms a sheathed bulb about the thickness of a finger and 5cm to 8cm long. Leaves are broad elliptical or lanceolate. Flowers are whitish green. The plant has an intense garlic-like odor, and the presence of specific odor agents have been identified by researchers. The garlicky odor is thought more intense than garlic itself. It has some medicinal uses and is also edible.
