Asparagus officinalis
Asparagus is a perennial vegetable that can produce a bountiful harvest for many years.
Produces large, rich, green stalks with succulent purple tips. Rust resistant. Plant in full sun, well-drained but moist soil. Cutting season can last up to 60 days.
You can harvest asparagus in the second or third year after planting, once the plants have become established. Harvest the spears when they are about 6-8 inches tall and before the tips start to open. Cut the spears at ground level using a sharp knife or scissors.
