Purple asparagus is mild in flavor but sweeter than green asparagus. It has a higher content of natural sugars than other asparagus varieties.
Purple asparagus is also nuttier in flavor. When cooked, these purple, stalky vegetables resemble a blend of barley, almonds and artichokes.
Produces an abundance of stringless spears that are more tender and sweeter than many green varieties. It can lose its colour when cooked so is best steamed or eaten raw. It also has the ability to produce white stems if earthed up as the spears are growing
