Ceratonia siliqua Seeds

Ceratonia, which belongs to the Leguminosae (Legume) family, is a genus that consists of one species, namely Ceratonia siliqua. It is believed to be an archaic remnant of a part of this family now generally considered extinct. It grows well in warm temperate and subtropical areas and tolerates hot and humid coastal areas. As a xerophytic (drought-resistant) species, Carob is well adapted to the art of bonsai.

Carobs can be male, female or hermaphrodite. Only the female trees produce brown leathery pods (up to 1 foot long) 11 months after pollination. St. John is supposed to have eaten the pods of the Carob. These pods are rich and sugar and are milled as a chocolate substitute. The hard seeds inside the pods are not edible. The pod contains less fat and more vitamins than cocoa.

Carob powder and carob chips are used as an ingredient in cakes and cookies. Carob is sometimes used as a substitute for chocolate. The seeds, also known as locust beans, are used as animal feed. They are also the source of locust bean gum, a thickening agent used in numerous processed foods. In Egypt, carobs are consumed as a snack. Crushed pods are used to make a refreshing drink. Compotes and liqueurs are made from carob in Portugal, Spain and Sicily. Carob has proven effective in relieving diarrhea in infants.

Carob has also been used as a non-toxic alternative to chocolate in dog treats. The theobromine in chocolate is toxic to most dogs.
