To get scientific on you, these knives are made from a ceramic material that falls right below diamond on the hardness scale. In other words, the only thing sharper than ceramic is diamond . Because of this, a ceramic knife will easily glide through something like a tomato without crushing it (and subsequently squirting tomato juice in your eye... ouch).
