If you didn't already know, ceramic knives are EXTREMELY sharp as ceramic is a very hard material. To get scientific on you, these knives are made from a ceramic material that falls right below diamond on the hardness scale. In other words, the only thing sharper than ceramic is diamond . Because of this, a ceramic knife will easily glide through something like a tomato without crushing it (and subsequently squirting tomato juice in your eye... ouch). My favorite part of these knives is the fact that they will stay sharp for a very long time and require minimal sharpening efforts. Also, ceramic knives make a great gift for housewarming, newlyweds, or any cooking enthusiast
