This specific "Micro Mate" browning dish was manufactured primarily during the 1980s. It was part of a specialized line designed for early microwave technology, featuring a unique tin oxide coating on the bottom that absorbs microwave energy to sear and brown food.
But how do you use it??
Using a browning dish like your CorningWare MW-A-10 is different from using standard microwave glass. It uses a special tin oxide coating on the bottom to sear the food.
Here is how to get the best results:
1. Preheating (Crucial Step)
Unlike most microwave-safe dishes, a browning dish must be preheated empty to activate its searing surface. Place the empty base (no lid) in the microwave. Heat on High for 4 to 6 minutes. Tip: Do not exceed 8 minutes, as extreme heat can damage the microwave's floor or the dish itself.
2. Adding the Meat
Once preheated, use heavy-duty oven mitts to remove the dish. Immediately place your meat (steaks, chops, or burger patties) onto the hot surface. You should hear an audible sizzle. Do not add oil or butter before preheating, as it will burn and smoke. Add a small amount of fat only after the dish is hot if needed for flavour.
3. The Cooking Process
Press the meat down slightly with a spatula to ensure good contact with the browning surface. Microwave on High for about 1 to 2 minutes per side, depending on the thickness. Flip the meat halfway through. The second side will brown, but usually not as deeply as the first because the dish begins to cool.
4. Safety & Care
Always use dry oven mitts: The dish reaches temperatures over 200°C (400°F). Avoid Thermal Shock: Do not put the hot dish directly into cold water or on a cold countertop. Place it on a wooden board or a heat-resistant trivet. Cleaning: To preserve the special coating, avoid using metal scouring pads. Let it soak in warm soapy water to loosen burnt-on bits.
