Cucumis metuliferus
A traditional food plant in Africa. Can be eaten at any stage of ripening.
When when young and green, just remove spikes and ear like a normal cucumber.
If left to ripen, skin will turn yellow, and flesh will be green and gelatinous, has a mixed flavor of cucumber, zucchini, and kiwi.
Kiwano contains a good dose of vitamin C and vitamin B6; it is an excellent source of trace elements such as magnesium, calcium, potassium and iron.
