The distillery / alembic
The distillery / alembic is the most widely used system of distillation.
Typically, the distillery / alembic consists of a boiler, with variable capacity, which is placed on a capacitor helmet extending in a cooling tube to the condenser in the form of a copper coil, housed in a deposit, which will be introduced the coolant, with exit to the distillate. The deposit usually fills up with cold water normally circulating in the opposite direction to the distillation coil. At the exit orifice there is usually a device for placing the alcoholometer to provide the degree of output control, and separate the various stages of distillation.
In the distillery / alembic, the mixture is placed in the boiler under which will focus the heat, which must be moderate and steady, never excessive or irregular. Upon reaching the boiling point, the mixture evaporates and condenses in the condenser helmet, which is (in fact) an expansion chamber, passing through the cooling tube into the condenser where it is condensed through the chilled water coil, causing the distillate.
