The reason canopic jars were used by the egyptians is that during the mummification process all the organs apart from the heart were removed so the body was basically an empty shell.
The Egyptians believed that the organs had to be kept with the body though, so canopic jars where made to keep the organs honored, respected and safe with the body
Sometimes the covers of the jars were modelled after (or painted to resemble) the head of Anubis, the god of death/embalming.
These jars have been around for years, and surviving examples of them can be seen in museums.
The canopic jars were buried in tombs together with the sarcophagus of the dead.
It was also done because it was believed the dead person would need their organs for the afterlife.
