Endive Green Curled Ruffec

The Endive Green Curled Ruffec is a pre 1865 heirloom variety. The 36cm heads of this cold hardy variety have large deeply cut outer leaves that make a great addition to summer salad mixes. The center hearts (which are commonly known as Escarole) blanch to a creamy white when leaves are tied up 2-3 weeks prior to harvest. Curled Green Ruffec is more tolerant of cold, wet weather than other varieties. From seed to harvest in about 95 days. Plants develop the best flavor in full sun with a moderate amount of moisture and humus rich soil. Sow seeds direct to the garden in spring or late summer. Can also be started indoors in peat pots 4-6 weeks prior to planting time for earliest harvest. Endive makes a savory compliment to rich soups and salad mixes and is also great when sautéed. Edive is a good, low calorie source of vitamins A and K, foliate and fiber.
