Book bought in Mauritius!                                                                 Mauritius is a meeting place of different races, a melting-pot.  That diversity, which constitutes our richness, is again present in our feeding habits, each ethnic group having, in the course of time, kept its tastes and cooking tradition.

Africa, Europe and Asia are all represented in our dishes as components of our mixed culture.  We must add to these foreign influences and contribution what makes up our own Creole and Indian Ocean civilisation.

All these have given birth to the Mauritian cuisine........
