Japanese Japonica Sushi Rice is a short grain rice grown in Japan. When cooked, it has a sticky texture such that it can easily be picked up and eaten with chopsticks. It is sometimes labeled sushi rice, as this is one of its common uses.
Short grain Japonica rice, the best for sushi, was first cultivated in Japan about 2,400 years ago. Today, the most notable sushi rice is Koshihikari, which is ideal for moulding into sushi shapes.
