The Jerusalem artichoke, also called sunroot, sunchoke, wild sunflower, topinambur, or earth apple, is a species of sunflower native to central North America. It is cultivated widely across the temperate zone for its tuber, which is used as a root vegetable.

Jerusalem Artichokes are mild, sweet, and crunchy, with a nutty taste similar to water chestnuts, hazelnuts, and jicama

Although technically in season in the South from early fall through spring, this tuber reaches its peak flavor in winter. Choose firm sunchokes with no blemishes, sprouts, or soft spots, and store them on the counter for a week, or in the refrigerator for up to three weeks.

Jerusalem Artichokes contain inulin, which when consumed raw can lead to serious gas and bloating. As such, they've been unofficially titled fartichokes. While inulin sensitivity varies from person to person, it's best to avoid eating sunchokes raw altogether.

Jerusalem artichoke tubers look a little like ginger root, with brown skin and an irregular, lumpy shape.
