What is kale? Essentially it's a primitive form of cabbage that doesn't form a head. As a garden crop, it's the least demanding in terms of care and nutrients of the greater cabbage family. Don't confuse the edible varieties, normally grown from seed, with the ornamental kale available as plants and used for winter color in the landscape.
What makes kale taste good is sugar. In that respect the plant is like carrots and other root crops that sweeten after a few frosts convince them to convert stored food to sugar. Sugar serves as anti-freeze for the plants and a flavor enhancer for people.
