Lima beans are large, creamy legumes known for their velvety texture and mild, buttery flavour. Despite their humble reputation, they are culinary "chameleons" used in everything from classic Southern comfort food to modern high-end salads and stews. 
Scientifically called Phaseolus lunatus, 
The name "lima" comes from Lima, Peru, where they were originally cultivated and exported. 
Historical Art: The ancient Moche culture of Peru (approx. AD 1800) valued these beans so highly they frequently depicted them in their pottery and art.
Unlike most common beans that are annuals, Lima beans are actually perennial plants in warm climates, meaning they can regrow year after year from the same root.
Nature's Gnocchi: Because they are so large and creamy, modern foodies often refer to them as "nature's gnocchi" when served in thick pasta sauces.
In Japan,  lima beans are pureed and sweetened into a paste called anko, which is used inside traditional desserts and pastries.
