It's made using “starter” grains, just as sourdough bread has a “starter.” This starter is a combination of yeasts, milk proteins, and bacteria. Simply drop your grains into 2 litres of milk and allow to stand lightly covered for 24 hours for Kefir milk to develop. Alternatively, you can do a second fermentation without the grains and after straining (further 24hours) and make Kefir yoghurt. The milk resembles buttermilk and the yoghurt tastes like plain yoghurt. Nuts, peanut butter, vanilla extract and non acidic fruits may also be added.
