As opposed to traditional methods of cooking, induction heats the cooking vessel directly. When gas heats the air around the vessel, regular electric cookers heat the cooking plate which in turn heats the vessel. Induction is the process of heating the cooking vessel by method of an electromagnet inside the induction cooker. The magnet rapidly changes polarity, which causes the particles in a ferrous metal to move around rapidly. This movement causes friction between the particles which in turn causes the pan or pot to heat up.
