Mrs. Beeton`s Cookery & Household Management - 1961 Edition

Beautiful vintage item with dustcover, fortunately been wrapped up well, very good condition.

"This is a mid- to late-20th-Century update of the classic Mrs. Beeton's. It still contains most of the material in the original, but updated to describe middle and upper-middle-class households in post-war, post-rationing Britain. There are still more than 1500 recipes included, for all the traditional favorites, although in some cases they've been tweaked for more modern palates and ingredients. If you compare this edition to the 1865 original you will see that modern Britons prefer more subtle seasoning than in Victorian days, when Mrs. Beeton's original recipes often included liberal doses of cayenne pepper, curry powder, and other assertive flavors! The modern edition is useful for anyone who actually wants to cook from the book, as the recipes are shown with modern British standard measurements (and contains a useful table of conversions). It's possible for a modern cook to use the original edition, but results could be somewhat hit or miss if you don't know that a tablespoon or teaspoon in Victorian days weren't the same as they they are now. On the other hand, the original edition shows how the dishes would have been seasoned then, which may be more palatable to contemporary diners who, once again, have a greater appreciation for more strongly seasoned food. For that reason, it's worth owning both editions!"
