New Mexican chilli pepper pods have a marvellous sweet, pungent, earthy flavour which you might find quite addicting. It is possible to derive three distinct flavours from one New Mexican chilli pod: the seeds alone, the flesh alone, or the whole pod. Each produces different levels of flavour and heat. You can bring the whole dried pod back to life by soaking it in hot water (almost at the boiling point) for 15-25 minutes. Then, the pods can be pureed into paste for sauce, salsa, tamales, flautas, burritos, tostadas, or a great variety of marinades.
