Oaxacan Green Maize, Zapotec Green Indian Corn Oaxacan (pronounced Wah-Ha-Kun) produces stunning, emerald green kernels on 15 to 25.5cm ears. It has been grown for centuries by the Zapotec Indians of southern Mexico, where it is commonly used to make green flour tamales. This variety is drought resistant and produces 2 meter sturdy plants. It should be ready to harvest in about 75-100 days. The supply of this traditional heirloom non-hybrid maize is limited and it is extremely rare to find whole Oaxacan Green maize available for sale. Zapotec Green Indian Corn can be stored indefinitely in a cool dark place. It is best to only grind the amount needed. Once ground, any whole grain flour will turn rancid in four to five days (because all of the natural oils and materials found in the grain are still in the flour) at room temperature.
