A friend gave me this book and I decided to try making some pita. I was blown away by how easy this stuff is to make! I have a fair amount of experience baking bread, so finding a bread that bakes this quickly (6 minutes) and has such a short rise (30 minutes) was wonderful. And, no surprise, homemade pita tastes markedly better than store bought. And one of the best discoveries: it freezes like it was made to be frozen! When I make pita now, I make way too much and then throw the extras in the freezer. Pita the Great!
