Fractal structure
Romanesco broccoli's florets are arranged in a logarithmic spiral that's a natural fractal. The number of spirals on the head is a Fibonacci number, where each number is the sum of the previous two. 
Taste
Romanesco has a nutty flavor that's similar to broccoli and cauliflower. It's also high in fiber, vitamins C and K, and antioxidants. 
Preparation
You can eat Romanesco raw or cooked. To cook, you can steam, roast, or blanch the florets, then shock them in cold water to keep their color. You can also pickle it. 
History
Romanesco originated in 16th-century Italy and is a member of the cauliflower family. It's also known as Brocco-flower or Roman cauliflower.  
Uses
You can use Romanesco in salads, purees, stir fry, or quiches. You can also pair it with sharp cheeses, garlic, olive oil, or creamy sauces.
