This item is secondhand and in good condition. In the times of our ancestors, grapes were harvested by hand, carried to the cellar in baskets and placed uncrushed into open tanks to ferment with natural yeasts into wine. In making the Whole Berry Cabernet Sauvignon this lost tradition has been re-enacted. The red wine cellar has been carefully designed on gravity flow system - there are no pumps or crushers, and the journey of the grape into wine is taken in the traditional ways. Whole Berry maceration is followed by fermentation with natural yeasts, racking, and one year's maturation in oak barrels. The result is a velvety wine with softer tannins and classical varietal characyeristics. This traditional wine which is unfiltered and unfined may deposit a sediment, possibly requiring decanting. 13,5% volume and contains sulphites.
