Cucurbita Maxima
Hubbard squash is a large, winter squash that is known for its hard, bumpy skin and sweet, nutty flesh. It is a member of the Cucurbita maxima family, which also includes other popular winter squash varieties such as butternut and pumpkin.
The flesh is dense and sweet, with a texture similar to sweet potatoes. It is typically used in soups, stews, and casseroles, and can also be roasted or mashed.
