The Red Speckled beans commonly known as the sugar bean is a legume. It is grown for its seed, which is eaten as a vegetable. It has a high soluble fibre content. Soluble fibre absorbs water in the stomach forming a gel that slows down the absorption of the bean's carbohydrates.
Red Speckled beans are used in soups, casseroles and salads, or served on their own, these versatile beans have a unique nutty flavour. In South Africa, they are often cooked with Samp (Crushed Mealies/Maize) as a dish.
Plant the seeds about 20 to 30mm deep and 150 to 250mm apart. Cover and water thoroughly. You should see sprouts in about one to two weeks. As with any beans, it is a good idea to have a pole or some kind support for the butter beans to climb up.
