BOTANICAL NAME:  Artemisa dracunculus

 

A very aromatic perennial herb.  May grow to a height of 60 cm.  Tarragon contains an essential oil, sugar and mucilage.  The essential oils are lost when the leaves are dried, hence the herb should always be used fresh to retain its health promoting properties. 

Culinary Tarragon is considered the lord of the culinary herbs.  Use in soups, garnishes, with fish, eggs, cheese, meat, game, stuffings, with vegetables and salads. 

 Tarragon needs a deeply dug, light well drained soil, with loads of good compost.  It requires a slightly acid soil, pH of about 6.  A sunny position in your garden, and a deep weekly watering will keep your kitchen well stocked with the fresh herb.  Should the plant grow too heavy, specially when it starts to flower, stake the plant.  Should your region suffer from frost, and strong winds, try to protect your plant.  Dry excess tarragon, store for later use.  Plant seeds in seed trays, in Spring or Autumn (see our plastic seedling trays).  Cover lightly with soil, gently press down.  As the seeds are small, pricking out will most likely be necessary.
