Artemisa dracunculus  Or Russian Tarragon

 

An aromatic perennial herb.  May grow to a height of 60 cm.  Tarragon contains an essential oil, sugar and mucilage.  The essential oils are lost when the leaves are dried, hence the herb should always be used fresh to retain its health promoting properties. 

Culinary Tarragon is considered the lord of the culinary herbs.  Use in soups, garnishes, with fish, eggs, cheese, meat, game, stuffings, with vegetables and salads.
