The Zapotec Jalapeño is an ancient, gourmet heirloom chili originating from Oaxaca, Mexico. Cultivated for centuries by the indigenous Zapotec people, this rare variety is highly prized by pepper enthusiasts for its deep, smoky-sweet flavor profile and robust, heavy yields.
Heat Level: 5,000 to 10,000 Scoville Heat Units (SHU). This makes them slightly hotter and punchier than a standard grocery store jalapeño (which usually averages 2,500 to 8,000 SHU)
Grows into a bushy, sturdy plant reaching 3 to 4 feet (approx. 90120 cm) in height.
Appearance: 2- to 3-inch thick-walled pods that ripen from a deep green to a vibrant carnival red. They are highly distinct for their heavy, tan stretch marks running lengthwise down the skin.
Its heat behaves differently too; instead of a sharp, immediate sting, the spice builds slowly and lingers beautifully on the palate.  Because of its exceptionally thick, juicy walls and higher heat, the Zapotec is widely considered the ultimate choice for making gourmet jalapeño poppers, fire-roasted salsas, hot sauces, and sweet-and-spicy "cowboy candy".
The tan, wood-like cracks on the skin are called corking. While commercial supermarkets filter these out because they look like "scars," heirloom growers know that heavy corking on a Zapotec indicates a fully mature, more flavorful, and often spicier pepper.
