Zephyr squash is a highly productive F1 hybrid summer squash (5060 days to maturity) known for its distinct, two-tone appearance: bright yellow with a pale green blossom end. Developed by Johnny's Seeds in 1999, it offers a firm, creamy texture with a sweet, nutty flavor, best harvested at 47 inches for optimal taste.
Key Characteristics and Culinary Uses
Appearance: Slender and slightly crooked, with yellow, white-striped skin and a light green tip.
Flavor/Texture: Dense, creamy, and nutty.
Culinary Applications: Versatile for raw, sliced, or grilled dishes; the flowers are also edible.
Storage: Keeps for about one week in a perforated plastic bag in the refrigerator.
Growing Tips: Prefers full sun, warm weather, and well-drained soil; it is a bush-type, productive plant.
Cultivation and Tips
Harvesting: Pick when 47 inches long for the best taste and to encourage continued production.
Spacing: Requires good, fertile soil.
Pests: Susceptible to squash bugs and vine borers; rotating crops and using row covers can help.
Variability: High heat can reduce the green coloration on the blossom end.
This squash is often confused with other summer squashes due to its similar, but more colorful, appearance.
