What is it?

Erythritol is a sugar alcohol which naturally occurs in some fruits and

fermented foods. Erythritol is about 60% - 70% as sweet as regular sugar. Part of the structure of sugar alcohols resembles sugar and part resembles alcohol hence its name. There is however no ethanol in sugar alcohols and thus it is not the same as an alcoholic beverage.

What can it do for me?

Erythritol has virtually no calories, it does not affect one's blood sugar and it also does not cause tooth decay. The body only partially absorbs it and it is therefore considered noncaloric.

What can I do with it?

Erythritol Natural Sweetener is a sugar substitute. It is commonly used in baked goods, various beverages and also in chewing gum. It naturally occurs in pears, wine, watermelon and grapes. Erythritol is also

heat stable up to 160C.

What can I substitute?

Xylitol or any other sugar alcohol may work as a substitute. The properties of erythritol and xylitol are however not identical so dont assume the results will be identical.

How do I store it?

Keep it in an airtight container away from moisture for a near indefinite shelf life.
